Val's kitchen:
Leek and Stilton Soup
A very rich creamy soup that we love to serve on special occasions.
Ingredients
25g/1oz butter
1 onion chopped
175g/ 6oz leeks, sliced
25g/1oz flour
900ml/1˝pints milk and chicken stock
100g / 4 oz blue cheese
Freshly ground pepper.
Method
Melt butter in
saucepan and fry onion and leeks till soft.
Stir in the flour and gradually add the milk and stock whisking continuously
until soup thickens.
Simmer for 20 minutes.
Liquidise
Stir in the cheese and pepper to serve.
Serves 4
