Rodeo Beef or Pork

Ingredients

 

3lb (1.5kg)                    Lean Beef or Pork       

3 tablespoons               Horse Radish sauce

2 tablespoons               Flour

1 teaspoon                    Ground ginger

1 teaspoon                    Dry mustard

8 tablespoons               Tomato sauce

8 tablespoons               Worcester sauce

½ pint (250 ml)            Stock

 Salt and Pepper to taste

 

1 Green Pepper

1 Red Pepper

8 oz (250g)                  Tin of Pineapple in juice. (Use the juice)

 

Method

Spread horseradish on meat

Mix      flour, ginger, mustard, salt and pepper,

Dust all over meat. Put in roasting tin

Mix all other ingredients and pour over meat

 

Cook Gas 3, 335o F or 160 o C for 4 hours, basting every hour

 

Serve with potatoes or rice.
