Val's kitchen:

Sweet Potato Soup

Ingredients

¾ oz.    20 g Butter or margarine

1 large onion, finely chopped

1 lb      500 g.  sweet potatoes, peeled and roughly chopped

½ lb     250 g   potatoes, peeled and roughly chopped

2 tablespoons  freshly squeezed orange juice

1¼ pts  700 ml  vegetable stock

½ teaspoonful ground coriander

¼ pt     150 ml  milk

salt and freshly ground black pepper

 

Method

Melt the butter and cook the onion gently until soft in a covered saucepan, without colouring.

Add potatoes, sweet potatoes, juice, stock and coriander.

Cover, bring tot the boil and simmer for 30 mins. until vegetables are tender.

Cool a little and then puree with the milk in a liquidizer.

Taste for seasoning.

Reheat and serve. (with a cream garnish if  desired)
